Convenience store inventory: how to count and control it

Full count vs cycle count

A full count of every SKU once a month or quarter gives the book value. Cycle counts — one category per day or per week — catch problems faster and don't close the store. Start with what gets stolen most.

Shrink

Shrink % = (expected inventory − counted inventory) ÷ sales

Expected inventory = last count + deliveries − sales from the POS. The difference is theft, damage, expired product and receiving errors. Around 1.5–2% of sales is common; above that, look at receiving and at the high-theft categories.
