Quick answer: count beer in two parts. Kegs: full kegs plus the open keg as a share of its size, in ounces — a 1/2 barrel holds 15.5 gallons (1,984 oz), a 1/4 barrel 7.75 gallons (992 oz), a 1/6 barrel about 5.16 gallons (661 oz). Beer is the easiest thing in the bar to count and the easiest to lose: foam, line cleaning, long pours and free pints all disappear from the keg without a ring on the register. A sheet that counts in ounces makes that loss visible.

A US beer barrel is 31 gallons, so the "half barrel" most draft lines run on is 15.5 gallons. Real yield is lower than the pour count: foam, the first pour after a keg change and line cleaning all take a share.

How much is left in the open keg?
Weighing beats guessing. Weigh one empty keg and one full keg of each size once, write the numbers down, and from then on every open keg is a simple proportion:
From the count to beer cost
- Usage = last count + deliveries − this count (in ounces for draft, in units for packaged).
- Compare draft ounces used with ounces sold on the POS. The gap is foam, waste, over-pouring and unrung beer.
- Beer cost % = usage at cost ÷ beer sales × 100. See beverage cost and keg inventory.

How do I measure how much beer is left in a keg?
Weigh it. Subtract the empty keg weight and divide by the weight of the beer in a full keg; that share times the keg size in ounces is what is left.
How do I count cans and bottles?
